If you are bored of the daily plain white rice but don’t have much time on your hands to prepare an elaborate meal then ought to try this.This one pot homemade Tomato Rice just gives it all at once.

Ingredients
2 cups basmati rice
5 medium tomatoes(blended to paste)
1 medium onion (cut into long slices)
3 long green chillies(slit length wise)
1 tbsp ginger garlic paste
1 tsp turmeric powder
3 3/4 cups of water
Ghee -2 tbsp
oil – 2 tbsp
Elaichi – 3
Bay Leaf – 1
Dalchini – 1 inch stick
Cloves – 6
Curry leaves – 5
Salt – To Taste
Procedure
1.Take a pressure cooker.Heat the ghee and oil together.
2.Add the elaichi,dalchini,bay leaf,cloves and curry leaves.Cook on low flame for two minutes without the lid.
3.Now add the onions and green chillies.Cook till the onions become translucent.
4.Add salt,turmeric along with ginger garlic paste.Cook on medium flame for a minute.
5.Add the tomato paste and mix well.Cook it for 5 min on medium flame.
6.Add the water and adjust the salt to taste.
7.Put the rice and cook for 2 whistles.(6 minutes on high flame)
8.Serve hot.
Yield – 4 servings
Prep time 15 min
Cooking time – 20 min
Notes
You can use regular long grain rice instead of basmati rice.
Serve with raita and any gravy curry.
If you want to flavour this dish more you can add nutmeg and mace along with the spices.
