I come from a family who call themselves “Egg Crazies”…Yes you read it right.The new addition into their group is my 5 year old son.They like anything ‘Made In Egg’ !!You scramble IT,boil IT,poach IT,curry IT,fry IT,biryani IT or just take like IT.They like anything.
So its like a daily challenge to woo them with their favourite hero.They are crazy enough to have it thrice a day and seven days a week.I thought why make them something that they can be content enough.
Then came into form our Homemade Egg Chatpat.This dish takes less time than boiling eggs.Its simple,tasty and an excellent side kick to plain rice,rasam,dal or any flavoured rice..
(P.S : They are so content that they are asking me for more of this now.Beware Of That!!)
Ingredients
Hard Boiled Eggs – 5
Sambar Powder – 10 gms
Red chilly powder – 1 tbsp
Curry leaves – handful
Garlic – 5 (pounded)
Green chilly – 1 (slit length wise)
Salt – to taste
Oil – 2 tbsp
Lemon juice – 1tsp (for garnish )
Procedure
1.Take boiled eggs and make cuts irregularly.
2.Heat oil in a kadai/fry pan and add the pounded garlic.Fry till you get a nice aroma.(2min)
3.Add the curry leaves and let them splatter.Now add the green chilly too.
4.Add the salt and the eggs.
5.Now fry the eggs on medium heat till they lightly brown.
6.Add the sambar powder and red chilly powder and cook on low heat for 2min.
7.Take the eggs off the heat and serve after sprinkling lime juice.
Notes
Lemon juice is optional and instead you can use green coriander for garnish.
If you dont have homemade sambar powder you can use any ready to use powder.
